View Full Version : Just fired up the smoker 7:30 am

Put on 2 13 lb pork shoulders and a 16lb packer brisket. Should be done in about 11 or so hours:smokingme

Well I figure you are gonna use the same amount of wood/time no matter how much meat you throw on. SO I went a little overboard and filled up the smoker. Besides if you freeze individual portions you can have that same great bbq outta the nukerwave at a later date ;)

Maybe I will snap off some pix later?

AWWWW I miss Texas BBQ so much. When I visit, that is all I eat. The BBQ out here sucks compared.

Thanks yall! I think I might just have to fire up a stick. Kinda overcast today so it is not so damn hot outside.

I will post up more pix when it is done later and pork is pulled and brisket sliced.

For the pork:

4tsp paprika
1tbs brwn sugar
1tbs salt
1tsp black pepper
1tsp white pepper
1tsp dry mustard
1tsb garlic powder
1tsp caynne

For the brisket:
1/4 cup salt
1/4 cup brwn sugar
1/4 cup paprika
2tbs chili powder
2tbs pepper
1tbs onion powder
1tbs garlic powder
1/2 tsp dried oregano

Both rubs were applied 12 hours befor the meat went on the smoker. In the pix the color you see on the meat is only from the rub, no basting, no sause added.

very nice smoke ring. not to start a debate, but THAT is barbecue, not something simmered in a bunch of sweet sauce, etc.

please make the trip to belton with some of that mike.

or, jsut come to our tailgate tomorrow. we start taking jager shots at 8:00 a.m.
