Interesting - I can't imagine how difficult it must be to just look at a pile of roasted beans and say "yeah... looks like another x seconds / degrees until City Roast". Roasting my own coffee sounds like a good hobby but I have a feeling that I would just end up drinking a lot of crappy coffee.

Where does Cuban roast, “Café Sabor de Cuba” fit into this? these guys were at Costco a couple weeks back, so I went online and bought the 5lb of this - http://www.rutamaya.net/store/ruta-maya-organic-cubita-coffee-11/
