I make up all my meals in advance for work every two weeks and freeze them. This is one I'm trying this week.

Title: Cuban Roast Pork
Servings: 6
Cooking Time: 6 hours
Preparation Time: 1 day

Ingredients
---
5-6 lb. Shoulder Pork Roast
1/2 cup orange juice
3 cloves garlic
1/2 cup lime juice
1 tablespoon oregano, ground
1 teaspoon cumin
1 teaspoon black pepper
1 tablespoon salt
1 large onion, sliced

Instructions
---

1. Trim fat from roast, if any.
2. With a sharp knife, cut tiny holes in roast and insert slivers
of garlic.
3. In large plastic bag, place remaining ingredients.
4. Shake to mix well.
5. Place pork roast in bag.
6. Place in refrigerator, at least overnight.
7. Remove roast from marinade and discard.
8. Preheat oven to 275 degrees F.
9. Place in covered baking pan and cook for 5-6 hours.
10. Turn once during baking.
