    Default Scrambled Eggs

Eggs as usual , no salt. Add cap of soy sauce or whatever amount you like. Enjoy. If the eggs look cooked in the pan, then they are overcooked.

I rarely have scrambled eggs; but when I do, I usually do it with refried beans on top of a tostada.

Yep. Add it in at the last minute so the cheese melts in with the eggs but does not burn.

Scrambled Eggs (like my Grandmother made them)

1 well seasoned cast iron skillet
    Nice, big, brown eggs
    1 Tbs butter per egg
    Salt
    Black pepper

    Melt butter over low heat
Crack eggs directly into the skillet. Break yolks, but don`t start scrambling yet.
Let the eggs sit a half minute or so until the whites start to cook, then start scrambling.
Remove from heat while still very moist.
    Salt and pepper to taste.

The key is farm fresh eggs. I am getting half a dozen a day.
When things seem like they can't get any worse, remember that there's beer.

I have 6 chickens so if the other 3 start laying, I will be happy. But...I will not get my hopes up due to the shortened amount of daylight.
