    Actually, breakfast...



    Made this Friday morning, from leftover gyro meat I had made. Greek omelet with gyro meat, sliced onions, diced tomatoes, diced kalamata olives, and feta cheese, topped with tzatziki sauce.

    homemade chicken enchiladas. smoked a couple birds. shreddded. sauce made with butter, flour, chicken stock, sour cream, and diced roasted jalepenos. flour tortillas, rolled with chicken, jalepenos, and shredded pepper jack cheese. topped w/sauce, cheese, and more chicken. baked for 45 minutes at 350. yep!!

    Made a couple deep dish pizza's. Both with home-made dough, 50% flour 50% cornmeal. One with onions, pepperoni and salami the other with sweet italian sausage.

    Also, a little flat bread pizza for my son to throw whatever toppins on he likes, he settled on salami and sausage.

    Cooked up an old menu item at work that we used to have.

    The Wiseguy burger: 6 ounce burger patty, 3 large cheese sticks, 8 fried pepperoni's, all drenched in marinara sauce. Known in the kitchen as a heart attack on a bun. Its over 2000 calories with a basket of fries and fountain drink.

    Wife bought corned beef and cabbage from a local butcher/grocer who makes about 3000 lbs for St Patricks Day... if good, will need to buy more.

    Tonight made baked Cobia, seasoned with cilantro and cayenne pepper, topped with a cherry, guava, raspberry sauce. Sides included asiago purple mashed potatoes, and sauteed asparagus with sun dried tomatoes... Totally deliciiousss!!! Enjoy
