I've used a few cheapie to medium grade and both s.s. and silicone. Only issue I've had is sometimes I pushed them to far inappropriately and the probe tip was near the edge of the meat. Are you pinching the cord in a door some something? I think the next one I buy is just gonna be a fire board. I wanna actually see it trend and watch the stall and other parameters.

Very nice. My walmart smoker (similar in style and would appear size to yours) is on its last legs too, the metal in the offset chamber is starting to get a little crunchy lol
This is a tuned Brinkmann. I added a couple truetel guages at grate level, tension clamps, and gasketed the whole thing. Also added these plates inside the cook chamber that make it work like a reverse flow...it has even temps at both sides.

This is a tuned Brinkmann. I added a couple truetel guages at grate level, tension clamps, and gasketed the whole thing. Also added these plates inside the cook chamber that make it work like a reverse flow...it has even temps at both sides.

Glad the plates worked for you. I tried the plates for reverse flow on a similar low end smoker with less than adequate results. It works better but still a pain in the ass to keep consistent.

I don't think it was the plates so much as real poor design. Fire box is small and hard to remove ash during cooking process etc and cooking area seal is bad. What are yours made from? Gauge?

The Brinkmann was an amazing offset for the money back in the day. They dont make it anymore, but it was the easiest to modify for the least money you could spend....wanna say grill and all parts ran me right at 450. If you go to that website they have a calculator that you can pit your dimentions in to see what size opening vs smoke box vs chamber. The Brinkmann was the only one that was at 97% efficiency or higher.

I plan on fabricating a new fire box for it. This time I plan on hitting that 110%!

I have the same smoker, and I am ready to launch it off a pier into the Pacific... maybe I should rethink that, and gasket the f**ker, because I feel like it bleeds heat everywhere...

I nodded mine, put in a good chamber thermo, gaskets where I could, it's a poor design though, I mostly found myself doing quick smokes on chicken pieces and stuff. Never had much luck using it on any long smokes, I'm going to at least get an insulated vertical in the spring, one of the ones with bluetooth and stuff. Probably try to get a RF ok joe or something. I've got traeger tastes on a walmart budget lol

I have a pellet smoker, a 500gal propane reverse flow, a kamado ceramic, and my old as hell Brinkmann.....that modded Brinkmann makes the best meat IMNSHO.
