This is your best bet. I would try to get a remote temperature sensor inside your walk-in that you could use to control the portable AC unit outside the walk-in, and then just rig up some flexible ductwork to pipe the cool air into the walk-in. The issue with mechanical cooling like that AC...

Find a trustworthy friend who will let you plug it in for a few weeks. It won't use that much power, but keeping it in an unconditioned place in the summer is pushing your luck IMO.

I removed that little round green foam POS from mine and put a small Boveda in its place. Works great!
