    Homebrewers - Whats Fermenting?

Electric is so much easier than gas. No fuel to run out of. Much easier to control temps. And lots faster to get to a boil. Plus the added benefit of not burning the shit out of me when I touch the boil kettle.

    Homebrewers - Whats Fermenting?

Sorry, haven't been around lately. Spring has been busy. I use my corny keg for an hlt. Also not pictured is a 240v induction plate and stainless pot I use for decoction mashes.

One of my favorite cigars on the nicest day of the year here in southern minnesota. After a long day of yard work now listening to the frogs and birds.

I'm back at it. I've made a couple loaves the last few weeks but nothing special. Turns out, after dry January ended I stopped craving carbs all the time. Today I made a couple loaves of cranberry walnut wheat. My same basic recipe with 20% whole wheat and 1.5 cups of craisins and walnuts...

I've allowed the dough to come to room temp and put cold dough in the oven and can't tell a difference. I use my wife's fancy enamel Dutch oven most of the time and I think it's 6-8 quart but I've also used my smaller 4 quart camping lodge cast iron with the same success. If you don't have a...

Same dough as yesterday. Baked in a loaf pan. Much tighter soft crumb. Should make great sandwiches.

Rye boule I just finished up this evening. 15% whole rye flour. 14g soaked caraway seeds. Whole flour never creates as big of bubbles as AP flour but it makes great sandwich bread because of it. I may cook the sister loaf in a loaf pan tomorrow morning.

You take me golfing next time I'm in dfw, I'll send you all the bread you want. Recipe White bread with poolish. 500g AP flour 500g H2O .25g active dry yeast (just a smidge. Don't be afraid to use to little. The flavor comes from a long ferment.) Mix together in bowl until no dry clumps. Cover...

Recent loaf of 15% rye bread I made. Sister loaf is already gone. Possibly my best recipe yet.

60 of the Weller. The blend improves the 114 but I probably won't do it again. Mostly because I really like the weller straight.

    Today's Bourbon

60/40 blend. Supposed to use OWA but I prefer the green bottle. Let it sit a week before sampling tonight. Feel like I could have gone 70/30.
