  • BOTL UPCOMING MAINTENANCE

    Hi Everyone, as mentioned in my introduction post, BOTL needs quite a bit of updating, patching and whatever else I might come across. Over the next few weekends BOTL may be unreachable on occasion as I do migrations or updates, etc. Just be patient - we'll be back! I'll generally try to keep these maintenances until later in the evenings.

Is it called like that because the French smell like onions? Whatever it mightbe, this soup is always regarded as a gourmet meal but never do ye really know it is also easy and cheap to make. So here's the recipe:

INGREDIENTS

* 1 tablespoon vegetable oil
* 3/4 pound onion, halved and thinly sliced
* 1/4 teaspoon sugar
* 2 tablespoons all-purpose flour
* 3 1/2 cups beef broth
* 1/4 cup dry white wine or vermouth
* 4 slices French bread, toasted
* 1/2 cup shredded Swiss cheese

DIRECTIONS

1. Heat oil in saucepot. Add onions. Cover and cook over low heat 15 minutes. Uncover.
2. Add sugar and cook over medium heat 15 minutes or until onions are golden.
3. Add flour and cook and stir 1 minute. Add broth and wine. Heat to a boil. Cook over low heat 10 minutes.
4. Divide soup among 4 oven proof bowls. Top each with bread and cheese.
5. Put the bowls in the oven and gratin (Let the cheese melt and form a crust)
