    Hi Everyone, as mentioned in my introduction post, BOTL needs quite a bit of updating, patching and whatever else I might come across. Over the next few weekends BOTL may be unreachable on occasion as I do migrations or updates, etc. Just be patient - we'll be back! I'll generally try to keep these maintenances until later in the evenings.

Well, here are three recipes for some home-made, mexican salsas. Hope ye enjoy!

Salsa Verde (Green Salsa)

INGREDIENTS

  • 1 1/2 lb tomatillos (green small tomato)
  • 1/2 cup chopped white onion
  • 1/2 cup cilantro leaves
  • 1 Tbsp fresh lime juice
  • 1/4 teaspoon sugar
  • 3 Serrano chiles (Jalapeños can do), stemmed, seeded and chopped
  • Salt to taste

DIRECTIONS

  1. Remove papery husks from tomatillos and rinse well. Cut in half and place cut side down on a foil-lined baking sheet. Place under a broiler for about 5-7 minutes to lightly blacken the skin.
  2. Place tomatillos, lime juice, onions, cilantro, Serrano chiles, sugar in a food processor (or blender) and pulse until all ingredients are finely chopped and mixed.
  3. Season to taste with salt. Let cool.

Salsa Roja (Red Salsa)

INGREDIENTS

  • 3 large, ripe tomatos
  • 10 Serrano chiles
  • 1/4 chopped white onion
  • 1 peeled garlic clove
  • Chopped cilantro leaves
  • Salt to taste
  • 1/4 cup water

DIRECTIONS

  1. Grill the tomatos and chiles.
  2. In a mortar, crush the garlic.
  3. Once peeled, crush the tomatos and chiles as well, add the onion and cilantro, salt and water.

Salsa de cacahuate con chile de árbol (Peanut and red chile salsa)

INGREDIENTS

  • 20 seeded red chiles (see the photo at the end)
  • 25 peeled peanuts
  • 1/2 cup olive oil
  • 3 minced garlic cloves
  • 1/2 teaspoon salt
  • 1/4 cup water

DIRECTIONS

  1. Fry the peanuts in 1/4 cup olive oil without burning. Take out to let dry and put aside.
  2. In the same oil, fry the chiles and add the remaining 1/4 cup olive oil until crisp, without burning (it gives a terribly bitter taste when burnt).
  3. Add the garlic until golden.
  4. Put the peanuts, chiles and garlic aside but keep the oil where ye fried them.
  5. Put the garlic, peanuts and chiles in the food processor with the water and salt and chop it all.
  6. Heat with the oil over low heat for 10 minutes.

I don't understand this part of the 3rd recipe:

Put the garlic, peanuts and chiles in the food processor with the water and salt and heat with the oil over low heat for 10 minutes

Put the peanuts, chile and garlic in the food processor. Also put in the water and salt. Chop it all, and then return to pan with oil and cook over low heat for 10 min. I'll edit it.

I thought that's what you meant. I almost put my food processor in the hot oil :grin:
