  • BOTL UPCOMING MAINTENANCE

    Hi Everyone, as mentioned in my introduction post, BOTL needs quite a bit of updating, patching and whatever else I might come across. Over the next few weekends BOTL may be unreachable on occasion as I do migrations or updates, etc. Just be patient - we'll be back! I'll generally try to keep these maintenances until later in the evenings.

Last night I made some Atomic Buffalo Turds with dinner. ABT's are jalapenos stuffed with cream cheese, wrapped in bacon and grilled or smoked. I halved and seeded the jalapenos. Then took cream cheese and mixed in chilli powder and a dash of cayenne and a dash of paprika. I filled the jalapenos with the mix and wrapped the jalapenos with bacon that I coated in brown sugar. Cooked them on the gasser with chicken thighs and veggie kabobs. The only problem was I ran out of toothpicks and they didn't hold together well, but they were tasty!!!

A kev, I was stuck on the first line where you mentioned....um turds? I have never ever ever heard food advertised with the word turd, LOL. Now that I got that out of the way..........sounds tasty my friend.

Our BBQ team makes them often for Friday night snacks. We don't use the brown sugar. We use pork sausage with ground up bacon mixed in. We mix that with cream cheese. We do half without stems and seeds then the second half we mix the stems and seeds into the ground meat and cheese mixture to give them a fiery bite. Wrap them with bacon and smoke them for four hours. The gentle smoking allows you to not use toothpicks and they look awesome.

I made these a few times this summer, I love them!

I did them once with jerk chicken instead of sausage. :starrylov

I love these things, I've seen so many variations to try. Thanks for sharing.

My favorite ones I've made so far had a filling of cream cheese, chorizo and cheddar and the bacon was covered in a BBQ dry rub. NOM NOM NOM. We've got a BBQ place here that stuffs them with pulled pork, they're good - but I really like a cheese filling.

You can find sweet peppers at the store or Sam's club. I usually do the sweet peppers mild and the jalapenos hot (mix ribs and seeds in the cheese) if I'm cooking them at home. Then the colored ones are safe for all, the green ones are going to light up your arse in a couple hours.
