  • BOTL UPCOMING MAINTENANCE

    Hi Everyone, as mentioned in my introduction post, BOTL needs quite a bit of updating, patching and whatever else I might come across. Over the next few weekends BOTL may be unreachable on occasion as I do migrations or updates, etc. Just be patient - we'll be back! I'll generally try to keep these maintenances until later in the evenings.

here's a good one...

Buffalo Chicken stuffed Pork Loin

Butterfly the pork loin by cutting a spiral through it so you can lay it open flat and then roll it back up like a jelly roll.

Stuff with a buffalo chicken mixture as follows.

blue Cheese dressing
cream cheese
grilled or roasted chicken cut or diced or shredded
hot sauce

Mix it all together until it tastes like you want it to.
Slather it all over the unrolled pork loin, rolle the pork loin up, tie it with baking twine, cook til 165 internal temp.

Oh, and season the outside with a nice pork rub.

Cooking on the grill is best. Smoking it is even better
