  • BOTL UPCOMING MAINTENANCE

    Hi Everyone, as mentioned in my introduction post, BOTL needs quite a bit of updating, patching and whatever else I might come across. Over the next few weekends BOTL may be unreachable on occasion as I do migrations or updates, etc. Just be patient - we'll be back! I'll generally try to keep these maintenances until later in the evenings.

2 cans chili beans
6 cans rotel diced tomatoes w/green chilis
loaded ham bone from a spiral shank
1lb package beef lil smokies
2 lbs NY steak cubed
2 lbs mild itailan suasage
2 packages belizean spice
white onion chopped
green pepper chopped
sharp cheddar cheese grated

in crock pot on low:
chili beans, tomatoes, lil smokies, and one package spice.

in large pot:
ham hock covered in water. cook till about 1/8 inch of water remains. ham need just a touch of help to fall off the bone. discard bone. add suasage, steak and package of spice. cook till done.

add to crock pot and simmer for 6 hours.

ladle into soup bowl. add onion, pepper, and cheese. and of course, Marie Sharp's Belizean Hot Sauce!! :thumbsup:

(belizean spice: cumin, garlic, oregano, thyme, paprika, yellow ginger, spice seed, and black pepper - Made in Belize).
