BBQ Ribs

Didn't have a chance to do them on the 4th, so I'm smoking them now.

Using lump hardwood charcoal & cherry wood chips, with a bath of apple juice and whiskey. Ribs are at about 90 min. at this point, on their way to 5 hours or so. I'll stop the smoke at 2 hours and let them coast. For lunch, I smoked some brats.

Oh man, those look so good! I miss doing BBQ/smoking. :( It's now illegal for me to BBQ in King County since I live in an apartment. :(

Very nice smoke ring man! I typically get my smoker going during the football season.

Thanks for the comments guys; I miss having some football to watch while I do this.

Just entered hour 3 on the BBQ. The ribs had great color so wrapped them in foil with a splash of broth inside to keep them moist.

Yes; the foil pan with the apple juice and whiskey sits over the coals, the ribs on the other side not over direct heat. Usually start with about a quart of apple juice and add another quart about 1/2 way through. If it starts getting dry, I'll then top off with water.

So 5 hours total on the BBQ and came out great. They were just about fall off the bone. No sauce needed; just went with the rub. Good stuff!

Geez guys! I had to make do with a roasted chicken, it was delicious, but now I feel like the kid on Christmas that was happy with his gift till he saw what his buddy got, lol.
