Looks great man, keep seeing a lot of BBQ on IG and I still haven't made it out to get anything to smoke yet.

Sean I just recently did 3 racks at my party for 7 to 7.5 hours and they were excellent man. Cooked at about 200-225 with straight hickory logs.

Baby backs at 225 will be fall off the bone at 5 hours if done right. I usually do St. Louis cut ribs and have them done in 5 hours at 250. I have smoked 15 slabs in June so I know my times are down. Take a meat thermometer ad probe in between the bones when 195 they are done.

I was between 225 and 250... And they were good to go at the 6 hour mark.

I think I am going to need way more practice.

Thats the fun thing about practicing BBQ, you eat your results and they only get better at you go.
True. I just wish there was more of a BBQ'ing community/tradition in Southern California... I have been trolling a BBQ forum that TravelingJ turned me on to, but I am a kinetic learner meaning that I have to see it/do it in order to learn it. What I really need to is start hanging out with jwintosh to pick his brain a little more. :smokingco
