  • BOTL UPCOMING MAINTENANCE

    Hi Everyone, as mentioned in my introduction post, BOTL needs quite a bit of updating, patching and whatever else I might come across. Over the next few weekends BOTL may be unreachable on occasion as I do migrations or updates, etc. Just be patient - we'll be back! I'll generally try to keep these maintenances until later in the evenings.

Did you pick off that Elk as he wardered across your front lawn? You do live up in the high country after all.

No, sad to say I never put in for elk. I can shot a javelin every night. I heard they were greasy though. We do see elk, deer and antelope all the time.

Awww man you are MEAN!!!!!!!!! You know how good that sounds?! Oh, and make sure your WIFE likes it. If the Mom in law doesn't like it, well she goes home eventually.
The wife and mom in-law loves my BBQ. So hopefully it turns out good. I will probably get up early have a hockey game to go to the night before.

I got the recipe off of Weber. It is the Brined and BBQ turkey with pan gravy. I wish I had a smoker. I just seen the one I want. The big Weber smoker. I will have to save up for that. The turkey will be indirect heat with apple chips.

A couple years ago, I deboned a turkey and pounded the thicker parts and tried to make it as even as possible. I took about 5 lbs of ground turkey and 5 lbs of ground pork and mixed it with a bit of sage, rosemary and some maple syrup and formed a log. wrapped it in the deboned turkey and trussed the beast. I smoked it and it was great. Everyone got a disk of boneless turkey with a ring of super crispy skin. All the drippings made for some good gravy.

I brine the bird and inject it. I run some garlic through my garlic press then blend it a pound of melted butter and some Smoking Guns BBQ rub. I inject that into the bird and with that much butter, it'll be moist.

If I don't inject it, I'll run the butter, garlic and seasoning mixture between the skin and the meat. That seems to work too.

I'm doing a bird on the smoker on T-Day. Do you mind sharing your bird recipe?
