  • BOTL UPCOMING MAINTENANCE

    Hi Everyone, as mentioned in my introduction post, BOTL needs quite a bit of updating, patching and whatever else I might come across. Over the next few weekends BOTL may be unreachable on occasion as I do migrations or updates, etc. Just be patient - we'll be back! I'll generally try to keep these maintenances until later in the evenings.

I work in a predominantly Latino area and I hit the bodegas frequently which probably explains my current girth issues. I'm looking for recipes, I love the roasted pork and the baked sweet platanos. The arroz amarillo con habicheulas kicks ass. Everything seems to be cooked with lard and the same spice base. The lard I can substitute for but I can't figure out the seasoning.

Don't. It's one of the reasons it is so bloody rich in flavour! Just dance the night off afterwards to loose the love handles. :thumbsup:
Now, for recipes; which latin cuisine would ye like?

The seasoning is called mojo criollo. Look it up on the net for some recipes. That is the key.
Aaach! I just smoked a CAO criollo! The marinade looks tasty but the pork I'm referring to doesn't have a citrus flavor. I will give it a go though, it does sound tasty.
