  • BOTL UPCOMING MAINTENANCE

    Hi Everyone, as mentioned in my introduction post, BOTL needs quite a bit of updating, patching and whatever else I might come across. Over the next few weekends BOTL may be unreachable on occasion as I do migrations or updates, etc. Just be patient - we'll be back! I'll generally try to keep these maintenances until later in the evenings.

I know that I can not be the only one on here that has an interest in cheeses. I am in the process of expanding my experience with different cheeses. Blue and Brie types are personal favorites. Can't stand whatever American cheese slices happen to be. Sharp cheddar, good swiss type chesses, real parmigiano reggiano are some other favorites. Found out that some of the "famous cheeses" of France are not available in the USA. The cheeses like Brie, Camembert, and Roblochron are all made from Raw milk in France and only aged for a short period of time. The FDA requires that any cheese shipped to the USA be made from pasteurized milk so we get cheese "made in France" we aew actually getting a form of these cheeses but not the real deal. USA artisan cheese makers are allowed to use Raw milk provided that the cheeses be aged for 60 days. These folks are winning awards in cheese contests all over the world. For those of you that have any interest in cheese what are some of your favorites? If you buy from USA artisan makers who do you recommend? Share your experiences.
