  • BOTL UPCOMING MAINTENANCE

    Hi Everyone, as mentioned in my introduction post, BOTL needs quite a bit of updating, patching and whatever else I might come across. Over the next few weekends BOTL may be unreachable on occasion as I do migrations or updates, etc. Just be patient - we'll be back! I'll generally try to keep these maintenances until later in the evenings.

is it possible to leave the brew in the secondary to long? have a nutbrown sittin in there going on 5-6 wks, its in a plastic carboy covered.

always good idea to have your secondary be a glass carboy. In glass you could leave it indefinitely just keep your airlock filled and temperature stable. I know a guy that kept a barleywine for a couple of years with no ill effect. the age did it very well.

Agreed with all other posters. After pitching the yeast, keeping oxygen away from your beer is key. If doing 5 gallon batches, it is always best to have a 6 gallon glass carboy. You want the least amount of head space to keep oxygen down to a minimum. Most plastic ones are 7 gallon. This will ensure any extra time in the secondary wont result in a undesirable taste.

thanks gentlemen, i bottled my nut brown on saturday. tatsed good flat so cant wait to try it in a couple weeks! only dilema now is what to brew up next!

I'll be doing a Rye Pale Ale. You should give it a shot.. or this continuously hopped Dogfish Head 60 Minute IPA clone:

5 gal
OG 1.088 FG 1.021
IBU 90 SRM 13 ABV 8.8%

16.5 lbs Pilsner Malt
1.66 amber malt

2.00 oz Amarillo 8% AA 90 - 0 minutes
0.62 oz Simcoe 10% AA 90 - 0 minutes
0.53 oz Warrior 15% AA 90 - 0 minutes
1.00 oz Amarillo Dry
0.50 oz Simcoe Dry
0.50 oz Warrior Dry

Irish moss
Wyeast 1099 (Whitbread)

Mash @ 122F then raise to 149F until conversion is complete.
Boil wort for 105 Minutes
With 90 minutes left to the bowl slowly and evenly start adding hops. (Works out to 0.25 oz every 7.5 minutes.)

Only thing other than slight difference in weights (we're talking fractions of an ouce here) is that the recipe I have for an AG 90IPA clone is my recipe has 19.8lb belgian 2row and a touch more amber.

That rye sounds nice! Well after I bottled my brown ale, I left the sanitizer(iodine solution) in my white ale pail. The pail and all my equipment sat in there over night and is now stained!! Did I ruin my pail and hoses?? Can I use that stuff even if its stained? I figure i can just resoak everything next brew in a claening solution then resanitze, right??

Iodine will stain equipment and turn it yellow. It does not effect the equipment it just stains it. I use Starstan sanitizer. It does not stain and is a no rinse sanitizer. It's costs between $9 and $11 for a small bottle depending on where you buy it. That's the range around here at the three stores I can get to within a half hour.

I never used iodine as a sanitizer so I can't say what if any effect a stained fermetor would have on the beer. The tubing is an easy fix any of the big box stores or the even the local hardard store's usually carry tubing.

To try to get out the stain you could try soaking it in powered brewery wash (PBW) or maybe oxyclean.

I've been using San Star sanitizer since I started brewing. Its a food safe, no rinse sanitizer. Its only draw back is its tendency to foam.

OOps my word reversal habit slipped in there. It's San Star hah. I hate the foaming but oh well it works. Everything I know about the iodine is that even if it stains it will not effect a fermenter as long as it's properly rinsed.

Is that the 60 or 90 minutes IPA?
You've got a 90 minute boil listed. :)
My bad it is the 90. I drink and talk about the 60 so much more it just slipped out!

For sanitizer I use Star San. It is a week acidic solution that is tasteless and doesn't effect the beer in any way. It can cost a lot for a little bottle but you dilute it so much it goes a long way.

Thanks guys, Ill probably soak in oxy for now as I wont be brewing for a bit, in the middle of a move so I may hold off for now.
