  • BOTL UPCOMING MAINTENANCE

    Hi Everyone, as mentioned in my introduction post, BOTL needs quite a bit of updating, patching and whatever else I might come across. Over the next few weekends BOTL may be unreachable on occasion as I do migrations or updates, etc. Just be patient - we'll be back! I'll generally try to keep these maintenances until later in the evenings.

Ideas for NYE hor dourves

Family,

The wifey and I will be our friends' house for NYE, doing surf n turf. I'd like to stick with the 'surf' theme, in figuring out some hor devours to bring.

Maybe something with Prawns, or stone crab claws, served as a cold dish?

Any and all ideas will be greatly appreciated!

Only ones I can come up with would be good warm..

Grilled Prawns wrapped in prosciutto or bacon wrapped scallops.

It'd be cool to come up with a way to combine the surf and turf in the same app.

Is it going to be something on a table with other items? If so a good lobster or crab dip with crackers would go well I'm sure and it's darn tasty (plus is served cold).

The surf n turf consists of some people with a new york strip/king crab leg combo and a ribeye/lobster tail combo. I like the idea of bacon wrapped sea scallops, as those would be something I could put on skewers and throw on the grill for a few minutes once it gets fired up for the steaks! However, sea scallops and shrimp relatively cook at the same speed, so maybe skewers that consist of: sea scallop, prawn, sea scallop, prawn? Hmmmmmm, I may have just figured out what I'm going to do!!

Bacon wrapped shrip w/ a spicy margarita sauce. To make the sauce, use:

Mayo
Pepperoncini (w/ juice to thin it out)
Tequila (clear)
Lime Zest

I don't know the portions since I usualy just wing it and season it to taste but go easy on the lime zest (use half a lime first). Run the peperoncini's thought a food processor...the smaller the pieces, the better but you don't want mush. Let it sit in the fridge for a few hours to let the flavors come out. If done right, it should have a little heat from the pepperoncini and the saltiness of the bacon should compliment the tequila and lime just as the salt on the margarita glass does for the drink.

Ah. Then I think the scallops and prawns grilled up would go nicely.

Let us know how they turn out and take some pics to let us drool over!
