  • BOTL UPCOMING MAINTENANCE

    Hi Everyone, as mentioned in my introduction post, BOTL needs quite a bit of updating, patching and whatever else I might come across. Over the next few weekends BOTL may be unreachable on occasion as I do migrations or updates, etc. Just be patient - we'll be back! I'll generally try to keep these maintenances until later in the evenings.

Jaggery sugar....

Anyone here use jaggery for cooking? I know its typically used in Indian dishes but I was wondering what it'd lend to maybe sugar based BBQ rubs or baking. I have used it in beer making with good results but the stuff is so tasty I need to expand my use of the jaggery. I have three cones of the stuff in my house right now. One is pale cane sugar, and two are dark dark palm sugar (destined for beer). I was thinking of replacing brown sugar with jaggery for baking holiday cookies and stuff. Regular refined sugar is so boring this stuff is so good.

Okay to reply to my own question a little. I have been using this stuff in place of sugar for mundane things like oatmeal and it's awesome compared to plain refined sugar. I need to use less and it gives a much better flavor. I am going to be looking into substituting this stuff for brown sugar in cookies and such.

is that English for Gur? if it is and if you've found the real shit its fucking awesome if you have that rancid powdered shit I'd stay away.
