Near future brew schedule

Okay so I did some ingredient buying. I picked up a 55lb sack of Dingeman's pilsner and a bunch of specialty grains. The following beers won't all be brewed with Pils.

For Peat's Sake (peat smoked malt used in the beer)
Belgian-style Saison
Bell's Two Hearted Ale clone
Dogfish Head 90min clone
Cascade hopped pale ale
Pliny the Elder clone (I think I picked up the stuff for this, I have the hops)
Citra hopped IIPA (tweak from my last recipe)
Might throw in some malted cider too for good measure

I brewed up a blone ale a few weeks ago using centennial and cascade hops. I think I'll give it a shot next weekend to see how it turned out.

Making "for peat's sake" right now. I think once primary fermentation is over I'll add some oak cubes to compliment the smoke flavors. I ended up throwing a whole pound of the Simpson's peat smoked malt in the batch. Total grain was 18lbs for a 5.5 gal batch. Gravity estimate is 1.084 at 70% efficiency. I typically hit ~85% on smaller gravity brews. I am counting on lower efficiency with this brew but I might surprise myself. I'm doing a poor man's fly sparge.

Hell looking at that brew list I need to get a new sack of 2row pale malt. I just picked up a sack of pils but I'm not using that in most of the recipes.

Okay I'm drinking some of my most recently brewed beers (other than the one I did today) and I like it so much I must share the recipe with you guys. It's a nice light refreshing blonde ale. It's goddamn delicious.

Biermuncher's Centennial Blonde

****5 Gallon Batch****

Batch Size: 5.50 gal
Boil Size: 6.57 gal
Estimated OG: 1.040 SG
Estimated Color: 3.9 SRM
Estimated IBU: 21.5 IBU
Brewhouse Efficiency: 70.0 %
Boil Time: 60 Minutes

Ingredients:

7.00 lb Pale Malt (2 Row) US (2.0 SRM)
0.75 lb Cara-Pils/Dextrine (2.0 SRM)
0.50 lb Caramel/Crystal Malt - 10L (10.0 SRM)
0.50 lb Vienna Malt (3.5 SRM)
0.25 oz Centennial [9.50%] (55 min)
0.25 oz Centennial [9.50%] (35 min)
0.25 oz Cascade [7.80%] (20 min)
0.25 oz Cascade [7.80%] (5 min)
1 Pkgs Nottingham (Danstar #-) (Hydrated)


Mash at 150 degrees for 60 minutes.

For anyone doing extract brewing this should be close according to the recipe creator.

I just sprinkle it on top; the manufacturer recommends rehydrating in warm water. I haven't noticed a difference if I do or don't rehydrate. You don't have to use nottingham it's just cheap and easy to use. If you have any WLP001 laying around that you harvested I'd just use that.

PS you should have smelled my mash tun with the peated malt!
