BOTL UPCOMING MAINTENANCE
Hi Everyone, as mentioned in my introduction post, BOTL needs quite a bit of updating, patching and whatever else I might come across. Over the next few weekends BOTL may be unreachable on occasion as I do migrations or updates, etc. Just be patient - we'll be back! I'll generally try to keep these maintenances until later in the evenings.

Those look dang tasty Jason! I see you have the second most important ingredient, bacon is a must for baked beans lol

The General
Those look great Jason !
Tweaked from the Ball Blue Book of Preserving. Makes about 6 pints.
1 quart of dry white beans (navy or great northern), about 2 lbs
1/2 lb of bacon or salt pork, cut into pieces
3 large onions, sliced
1 cup brown sugar
2 tsp salt
2 tsp dry mustard (I used 1 tblsp prepared mustard because I had no dry on hand)
1/3 c molasses
Soak beans for 12-18 hours in 3 quarts of water. Drain.
Cover beans with 3 quarts of water and bring to boil. Cover and simmer until skins start to crack. Drain, saving the liquid.
Pour beans into crock for baking.
Add remaining ingredients.
Add 5 cups of the saved liquid from boiling.
Stir until mixed well.
Cover and bake at 350 degs for 3.5 hours.
After baking, beans should be soupy.
For canning: Process at 10 psi, pints for 1 hour 20 mins, quarts for 1 hour 35 mins.
If you want to eat these straight from the oven (they are delicious), check them after the initial baking time and decide for yourself if they are tender enough. If not, put them back in the oven for 30-60 minutes.

Another bean recipe that I just made for a birthday party. I made a double batch and it was right around 6 quarts.
Calico Beans
Brown 1/2 lb hamburger
Cook 1/2 lb Bacon, cut into small pieces
Add 1 cup onion, cut fine; cook slightly.
1/2 cup ketchup
1 tsp salt
1 tsp mustard ( I like a couple of good squeeze's of Plochmans mustard)
2 Tbsp vinegar
3/4 cup brown sugar
Add:
1 lb can pork and beans ( I like Bush's Original )
1 lb can kidney beans
1 lb can Lima beans
Do not drain the cans of beans. Add all of the juices
Mix and bake 40-50 minutes at 350, uncovered
Serves 10 - 12
If putting in a Crock pot give it time to cook down so it will thicken up. I like about 6 hours on high.

MMMMM....did you see the pic of my labor day spread? my mom made her baked beans as well and they were killer. she puts a bunch of different kinds of beans in hers so they're def. different though.
