  • BOTL UPCOMING MAINTENANCE

    Hi Everyone, as mentioned in my introduction post, BOTL needs quite a bit of updating, patching and whatever else I might come across. Over the next few weekends BOTL may be unreachable on occasion as I do migrations or updates, etc. Just be patient - we'll be back! I'll generally try to keep these maintenances until later in the evenings.

Couldn't decide what to make for dinner, but had 2 boneless/skinless chicken breasts thawed, so had to find a way to make those taste good.......

Decided to cut them into tenders, seasoned with olive oil, salt/pepper and cayenne, put them aside.

Then decided to boil some spaghetti....got that going.

Checked the fridge for some vegetables and came up with red onion, cremini mushrooms and zucchini. Diced those up and preheated 2 skillets.

Sauteed the vegetables in one pan (added minced garlic), chicken in the other. Once the vegetables began to caramelize, I deglazed with reisling, added a little butter and then flour to thicken it up. Added the sliced chicken and tossed.

Drained the pasta, put in a large mixing bowl, hit with olive oil, added the vegetable/chicken mixture, tossed and plated.

I can't believe how GOOD it turned out! The reisling added SUCH a great flavor to this dish! After plating, I drizzled a little extra virgin olive oil, hit it with a pinch of sea salt, chopped chives and dinner was served!

It's amazing what you can create just by going through your fridge a little bit!

This is how a lot of specials are created at restaurants!

Cold nasty here, so we had chicken chili last night, and tonight, I dredged some boneless pork chops in flour, seasoned with garlic powder, onion powder, salt and pepper, and paprika. Browned them in some olive oil, then, tossed them into some golden cream of mushroom soup, threw them in the oven for a while while I made up some mashed potatoes, green beans, and a pan gravy from the tasty bits from browning the chops.

I'm salivating at the mouth, brother! Sounds REALLY good! I need to grab my cast iron skillet(s) from storage, so I can start going from burner to oven. I miss cooking that way :(

I frequently cook with chianti, and sometimes I add it to the food.
LOL :)

This was the first time I thought to cook with reisling. Frequently cook with cab sav for beef, but thought this would be good with chicken.

The taste and aroma from it was amazing. Highly recommend. Don't be shy when adding, either.

I think I've seen some pix of them, Frank. Look DELICIOUS! The wifey and I try to go out for sushi a couple times a month. It's amazing how when ordering, it all adds up! Wish it were cheaper :)

Oh, I hear ya! if it wasn't so pricey, I would go out for it, more often. It's amazing. I'm going to roll some to sell. I think... man, sounds great. Once I roll a bunch, I'm not hungry for them, anymore. LOL!

I have done California rolls, Philadelphia rolls, cucumber rolls, kampyo rolls (seasoned gourd strips). I hate rolling the smaller rolls... I only sell them for $4, but so hard to make them look good. It's tricky. I actually catered a friend's little gettogether once. I actually rolled and served as they sat and watched, sipping wine. LOL That was actually pretty fun.

Tried this tonight, thanks for posting it. Mine needs something. Not sure what. I didn't use the onions, not a fan of onions, but other than that followed your notes. Probably just a matter of proportions and amounts. One other reason mine probably didn't come out the same way is that my wife's a vegetarian so I didn't combine the chicken when tossing the veggies and pasta. Still, quite good, I will be trying it again.
