The third episode of Shark Week covers one of the more rare Sharks. The Sand Shark.
A gorgeous specimen, the Sand Shark is actually a sub-species of the Anejo Shark. The difference between the two comes down to their skin. The Sand Shark has a sandy brown colored skin, and has ties to Cameroon. The Sand Shark was originally found in early 2006. Their population was believed to be less than 100. Later in that same year, a larger population was uncovered, bringing their total number in the species to just under 2700. Their numbers have been decreasing ever since, as there have been no new Sand Sharks discovered in the wild.

Pre-light, the Sand Shark has a creamy, slightly caramel flavor, with a little spice. The first third of the Sand Shark has a dominant caramel flavor mixed with a little cedar, nutmeg and cream.
Mid way through the battle with this beast, the flavor is composed more of cedar. There is still a caramel sweetness present. Cinnamon and nutmeg spice round out the flavor. This Shark almost dropped some of its fight before I could capture a second pic.
The fight ends with a strong cedar flavor. A great balance of cinnamon and a little caramel make the end of the fight worthwhile. A shame that it had to end like this for this poor Shark.
What a tremendous fight to bring this one in. Just under two hours....I would have loved for it to keep going.
