  • BOTL UPCOMING MAINTENANCE

    Hi Everyone, as mentioned in my introduction post, BOTL needs quite a bit of updating, patching and whatever else I might come across. Over the next few weekends BOTL may be unreachable on occasion as I do migrations or updates, etc. Just be patient - we'll be back! I'll generally try to keep these maintenances until later in the evenings.

Ok, so Cinco de Mayo is coming up...soon!

I got this beautiful skrt steak off the steer i bought last summer. I figure it'll make for some good fajita meat..along with some chicken fajita meat.


anyone got any good recipes for fajitas that involve skirt steak???

or how bout any good recipes for skirt steak in general.

and speaking of cinco de mayo....


I really hope Moro and Schmear are doing alright...what with the mexico city lockdown and all.

Skirt Steak Marinade..........My way!

1/2 cup garlic
1/2 EVOO
4 bunches of cilantro
1 bunch of parsley
1 tbs red pepper flakes
1 chipotle
1/4 cup molasses
and my secret ingredient.... 1 qt of Country French Dressing

Puree all ingredients together. In a shallow pan, tupperware or big ziplock... pour marinade over steaks. Marinate for 24 hours or more, flipping steaks if in a container or if in the ziplock, work the bag (without busting it open) to insure all the steaks are marinated evenly. Before grilling, wipe all excess marinade off to avoid heavy flare ups...

This recipe also works with Flank Steak!!!

Thanks for the good wishes, Gale! We're still here.

Now, what is very Mexican is carne deshebrada, which is once the meat is cooked (boiled) ye tear it apart into strips (like beef jerky). That is mixed into a cold salad of tomato, onion, serrano peppers, cilantro and some lime. Ye serve it on some tostadas with fresh cheese and done!

you guys are making me hungry haha im starving enough as it is... if i was in mexico i would hit you ur brother so we could eat some carnitas or something but im in cali.. im just gonna enoy a smoke and maybe drink some budwieser haha
