  • BOTL UPCOMING MAINTENANCE

    Hi Everyone, as mentioned in my introduction post, BOTL needs quite a bit of updating, patching and whatever else I might come across. Over the next few weekends BOTL may be unreachable on occasion as I do migrations or updates, etc. Just be patient - we'll be back! I'll generally try to keep these maintenances until later in the evenings.

Well, I've decided upon which hor duerve to make, for a NYE party at our friends' house.

Spicy King Crab Stuffed Mushrooms :) I have them all finished now, then will bake for 30 minutes at 350 once we get to their house.

This was a pretty simple recipe, just a little bit of money.......about $50 for everything. Here are the ingredients:

- 12 oz of white mushrooms, stem removed
- 16 oz of king crab meat (lump meat)
- 6 garlic gloves, minced
- 1/2 cup of pickled jalapenos, minced
- 1/4 lb of habanero jack cheese, grated
- 1 tsp hot sauce
- 1 tsp worcestershire sauce
- 1/2 tsp sea salt
- 1/4 cup mayonnaise
- 2 oz parmigiano-reggiano cheese, grated



Cannot WAIT to try these tonight :) The most time-consuming part of putting this together was grating both cheeses. Other than that, fairly simple.

Okay, so after filling the sheet pan, I had 2 mushrooms left. HAD to stuff and bake them.....wow. BEST stuffed mushroom I've ever had. Period.

If you're a fan of stuffed mushrooms and crab, u HAVE to make these. I have enough filling left for a 2nd batch that I'll b bringing to a private Rose Bowl party tomorrow, at one of my B&M's!

They won't last. Mushrooms are like crack...can't control yourself once you get a little taste.

So by just adding a bit more mayonnaise to the initial recipe, you were able to fill 50 mushrooms?

Trying to figure out how many 'shrooms I need to buy, hah.

Correct. Keep in mind that the mushrooms I was filling were your basic white button mushrooms. The cremini mushrooms I bought yesterday are bigger and will be able to accomodate more of the filling. I will not get 50 out of these.

These were EXCELLENT, with cremini mushrooms! The cremini mushrooms are a much 'meatier' shroom and I really liked that texture against the hot filling.

Everyone LOVED them. Will be making another batch today with what leftover filling I have.

Here's how they turned out yesterday for the Packer game, using cremini mushrooms! After baking them for 30 minutes, I then turned the broiler on for approx. 5 minutes, to brown the cheese.

One thing I'll be changing from now on, is baking them on an elevated rack. The creminis retain a lot of water. This way, they won't be baking in all of that liquid.
