  • BOTL UPCOMING MAINTENANCE

    Hi Everyone, as mentioned in my introduction post, BOTL needs quite a bit of updating, patching and whatever else I might come across. Over the next few weekends BOTL may be unreachable on occasion as I do migrations or updates, etc. Just be patient - we'll be back! I'll generally try to keep these maintenances until later in the evenings.

Spicy Pickled eggs

I figured I'd share this with you guys. I got the recipe off the homebrew site I frequent.

2 cups apple cider vinegar ( split half apple half white)
1 cup water
2 Tbsp Salt
2 Tbsp Pickling spice
2.5 Tbsp Sugar
10-12 fresh Jalapenos or sub one full can of pickled jalapenos (cut in rings)
1-3 habaneros (cut in rings) (I only used one)
1 Tsp Worcestershire
1.5 Tbsp horseradish
2 Tbsp Dry Mustard ( I left the mustard out)
1.5 Tbsp Peppercorns
1 Tbsp Cayenne (left out and used some of my "hottest fucking sauce")

Simmer above ingredients above for ~5 Min.

Pour Over :
12 hard boiled eggs
1 sliced onions
1 head of garlic (I used a pretty small head so maybe half with bigger garlic heads)

I peeled all the eggs and added them to a large mason jar I think it's the 4 pint model. It fit 13 eggs perfectly. I layered the onions, the chillis, and diced up garlic. Then I poured the bring in the jar and topped it off with some additional white vinegar. Should be ready in a week or so and if they're great I'll be making a second batch as soon as possible.

LOL now I know why they call you smokinghole...cause that's what will happen after you get those eggs...

My wife, who is from Taipei makes these basted in beef jus, garlic and chiles, and it is awesome. She cooks the beef, tendon and eggs together and the basted eggs are just incredible.

Not the same thing.....just saying.....

Nothing goes better with a good beer than a few pickled eggs....and a cigar or two! :thumbsup:

Here's the eggs. If you guys haven't done this yet they're GOOOOD. Another week will improve the flavor but these are awesome. Spicy but not too much so. That is a relative opinion though obviously. So if you are sensitive but still want spicy cut back on the jalapenos. I'll be putting all the peppers I have left in for the next batch. I'll make them up tomorrow for christmas. Yum!
