  • BOTL UPCOMING MAINTENANCE

    Hi Everyone, as mentioned in my introduction post, BOTL needs quite a bit of updating, patching and whatever else I might come across. Over the next few weekends BOTL may be unreachable on occasion as I do migrations or updates, etc. Just be patient - we'll be back! I'll generally try to keep these maintenances until later in the evenings.

Well, after the Tat Black I was hungry with an "H" of "Hell, I'm so bloody hungry". So I made me a simple dish (not sure how I'd call it):

Ye fry some corn tortillas, but only halfway for them to be crispy. Ye want them to still bend at least a tad. I had refried some black beans in pig fat, and I fried an egg, keeping a runny yolk. Then I put the beans atop the tortilla, I "break" the fried egg a tad and put it on top of that, and then sprinkle grated cheese. I had it with some whole milk with cajeta (goat milk with sugar boiled to make a caramel) and crushed ice.

That sounds pretty good too!!! the ice cream and the tat black (never had one... but it seems to be liked)

That ice cream sounds too good actually. I wish I could have some now!

I could have gone for a snow cone walk last night. Didn't have to go very far as it was snowing again.:hanghead:

That sounds fantastic! What kind of cheese did you use? When I was a kid we used to go to Juarez and get what they called "queso Menonita". It was made by the Menonnites in Chihuahua. I have seen it called "queso Chihuahua" since then. It was kind of a white cheddar or Jack style cheese.

It's called "Panela" or "queso fresco" ("fresh cheese"). Sort of the Mexican Mozarella (similar texture, soft flavor (though different)).

Queso fresco is pretty easy to find around here. I am always on the look out for that Mennonite cheese because it was so good. Probably because it was homemade instead of factory made.
