  • BOTL UPCOMING MAINTENANCE

    Hi Everyone, as mentioned in my introduction post, BOTL needs quite a bit of updating, patching and whatever else I might come across. Over the next few weekends BOTL may be unreachable on occasion as I do migrations or updates, etc. Just be patient - we'll be back! I'll generally try to keep these maintenances until later in the evenings.

So...this year Thanksgiving is at my house...and I plan on smoking a turkey.

I have 22.5" kettle grill that I plan on using...I don't have to do sides...

so the wife has agreed to be a tester of any turkey I plan on making...

anyone try this before?

I usually fry one and bake one (or my wife does the baking) but I noticed this year the price of peanut oil has gone up. I use the injection method, injecting seasonings and spices with a culinary needle. Turns out great every time, I'm getting hungry thinking about it...

starting a test run.

brineing the 11.5lb bird in 1/2 gallon of water, 1/2 gallon of apple juice, 1 cup of kosher salt, and some poultry seasoning. in a 2 gallon bag over ice in a cooler.

24 hours...will update tomorrow, as I'll be smoking using applewood chunks...and natural charcoal briquettes. My mouth is watering typing this.

Deep frying is the ONLY way to go. I dont ever want turkey prepared any other way. Now my mouth is watering....

So how'd it turn out? Moist with a nice little smokey flavor I bet!
the best turkey ever. so moist, juicy...and a hint of smokiness.

I nearly lost the turkey...I have a kettle, but its not a weber...and the weber replacement grill grates are slightly too small...but I saved it.

so good...looking forward to sammiches.
