I use a Toddy for cold brew and just follow the ratio in the insturctions, off the top of my head i think it is 7 cups of water for 12oz of ground coffee

Just a couple thoughts, HCM beads also adjust their rh level, so if they were in a lower rh environment for awhile I think they might have dropped their rh (like how you put them in the fridge for a little bit if you want to lower the rh they are set at). So you might have to check their rh...

I vote for bcjs or huhcs. But you can always host box splits so you can try them out before committing to full boxes
