Looks great! I'd add huitacloche; but ye americans don't like that...
Ahhhh...the Mexican truffel. I've tried it at a restaurant in DC called Oyamel (where you can also order grasshopper tacos, seriously :grin:). Interesting texture and flavor.

I'd eat it, I have eaten worse. But when we get that here, I usually cut that part off because there is a worm in it. Do mexicans eat chitterlings? I do!
Not per se, but we do have carnitas, which is pieces of pork deep fried in pork fat used for tacos and it uses everything in the pork. From thigh meat, to the brains,...EVERYTHING but bones.
