The Springbank reminded me of Rosebank, a Lowland that a pal gifted me. It had a little brininess, with some sweet notes, like honey or vanilla, especially on the nose.
Next time we'll need to hit Hudson Bar & Books. A very good menu, plus they have tasting flights. Carnegie Club has a a good selection of pedestrian single malts.
Macallan was a good first choice. Glennlivet or Glennfiddich would be fine as well.
I like Lagavulin but it's not for beginners. After Macallan I would steer you towards Oban (my favorite) and then some Islays. Good variety of peatiness there.
