. That's what's going down here today. Brisket went on at 4am should be done around 3pm. A few swings on the fire box temp, but I'm trying to keep it in a narrow 50 deg +\- band. Went down when I added another log...then up when it caught flame. Probably coulda gone anothe 90 min or so with the coals and logs that stated the smoker, next time maybe I will remember that. Going to pull the brisket at 155 and wrap in pink butcher paper I picked up, and throw it back on till 200deg. In the mean time I have to keg a 7cs IPA because I need that fermenter for today's brew session...gumballhead IPA.
