Don't let it get warm, and keep it outta the light.
A wine cooler maybe? Regular cooler would eventually warm up.
Dirt floor in the crawl? Maybe you could dig out a space. I put a sump pit in my crawl, about 2.5ft deep, plastic liner and a lid. Never did anything with it, but I suspect it would work as a cellaring area.
It's concrete, no digging. I'm kind of a a loss right now outside a wine fridge.

I've always been under the impression that you don't want to lay beer on its side, which I think would be inevitable in a wine fridge. If possible, maybe grab a regular fridge and hook it up to a Ranco temp controller. Room permitting, of course.

OK I have a few questions. I'm wanting to celler some beer but my house gets hot in the summer ( 85° +, no ac). I have a fridge that's not being used so I plan on using it. Do I need to wire in a temp control? Will corked bottles be OK in the fridge? The article on the page before said 50-55° is a great temp. Would you recommend a different temp? Thanks

I started cellaring last year and thought I'd snap a pic. Since we have shit for selection in ND, some beers here are pretty pedestrian. Hoping time does them a favor.

MMM Narwhal favorite go to imperial. Been thinking of giving some aging a try myself recently. I like the crawl space idea. Stays pretty cool down there the issue would be too cold though in the winter months, move it to the garage?

It helps having a room in your basement.

A few tidbits I have learned over the years:
- Store away from light
- It does not HAVE to be exactly at 55 Degrees, just as long as it is not overly warm and a steady/non-fluctuating temperature. My basement stays right around 61-64 depending on the time of the year
- Drink anything hoppy fresh (exception is barleywines)
- Store upright, unless it is a corked and caged bottle
- Just because it is a stout & high in alcohol does not mean aging it will make it better
- If it was brewed with coffee - drink it. Coffee fades over time. Or any adjunct really. . vanilla / maple syrup / fruit / etc
