Some pieces were done at about 4-4.5hrs, the rest of them were done right at 6hrs. You're right about the pieces being a little thick. I tried to stick to roughly 1/8'' cuts, but even that was a little on the larger side. Next time I'll slice a tad thinner and also tenderize a lot more. This time I did some pieces a lot and others barely at all. Those that I beat the crap out of were super tender and easy to chew.
