  • BOTL UPCOMING MAINTENANCE

    Hi Everyone, as mentioned in my introduction post, BOTL needs quite a bit of updating, patching and whatever else I might come across. Over the next few weekends BOTL may be unreachable on occasion as I do migrations or updates, etc. Just be patient - we'll be back! I'll generally try to keep these maintenances until later in the evenings.

El Diablo Chili

This recipe is courtesy of my father in law, Bob. He's a retired fire chief and an AMAZING chef!

- 1 1/2 lb chuck roast
- 2 tbsp chili powder
- 12 oz chili sauce
- 1/2 lb dry black beans
- 20 oz canned stewed tomatoes
- 1 medium onion (chopped)
- 2 habanero peppers
- 2 serrano peppers
- 1 tsp vinegar
- 12 oz water
- salt & pepper to taste

Slow cook roast with chili powder and chili sauce in crock pot for 4-6 hours on high.

Soak beans overnight. Drain, rinse, cover with water and boil for 30 minutes, or as package suggests.

Roast peppers in heavy skillet until charred. Rinse under cold water, peel skin off, chop fine and de-seed.

Combine roast, beans, peppers and all other ingredients and let simmer for 1-2 hrs.

I've never had a chili with shredded beef in it, but it is absolutely amazing! If you're like me, you'll top with shredded cheese, sour cream and diced onions!

If you're going through the trouble of cooking this recipe, make a double batch! It freezes very well and EVEN gets better :)

Sounds good, well, except for the beans! LOL

I prefer to tend to the chili all day, usually have 5-6 lbs or more of meat, propane burner with a big ole pot on it...however, a crock pot is OK if you are lacking for time, just put it on in the morning and have it for dinner.

I'd share my "Brad's 3-Burn Chili" recipe with ya, but well, it's secret...it does contain ALOT of goodness (spices, peppers, etc.). Chili cookoffs and just cooking chili in general are a BLAST! Especially the next day...LOL

Great to hear, brother! Was this your first time having a chili w/shredded beef?

Did you rock a double batch? Man, it freezes well......heat really picks up, too! I'm happy it worked out for you and thanks for posting!

Jeff everything sounds great, except for the habaneros... f that. lol. Wonder if they can be substituted for something less deadly..

Perhaps.... I can usually handle their heat. I've gotten better about peppers since I moved to texas, but some stuff still kills me.

Got a friend that is trying to grow some bhut jolokia peppers right now. They have a rating of something like a million scoville units. Crazy.

Yessir, first time with the shredded beef. I also added red and green peppers and two additional types of beans (personal taste preference).

I did not make a double batch, but I've got two buddies coming over in a couple of weeks for a chili and stuffed cabbage fest (making cabbage while the chili cooks). So we will "triple-up" both recipes......and drink beer......and pass a little gas.......and if it's not too cold in Ohio, a nice cigar during a break.........ahhh, the good life!!!!!!

Yup... the infamous ghost chili... Been there. Done that.
