Fried Alligator Gumbo is ok.

Best game meat IMHO is Elk, rare with foie gras on top. Typical appetizer at restaurants in Jackson Hole, WY. Love that place!

Saw yak at the butchers today. A little too lean so went with some 28 day dry aged ribeyes.

Close to two years ago, I went to Australia for vacation. One night at dinner in Cairns, I had Kangaroo (second time on the trip, first being Kangaroo pizza in Sydney), Crocodile, Emu, and IIRC, the fourth meat in the combo was Camel. Also shared a seafood combo, which was prawns, bugs (not insects), barramundi, and calamari.

Had grilled Kangaroo this summer. Really tasty and juicy. Very tender like a good filet.

OK, so when I was in Alaska several years ago 2 guys I worked with were "big game" hunters. Some on the list;
Elk
Black Bear Sausage
Gator
Mountain Lion
Bison
Ostridge
Also several other meats that he killed in Africa which I can't recall.
