Got a recipe from a BOTL on the dough, and went ahead and tried out this grilling pizza thing.

This was my first time doing it, so I ran into a few issues, but I know how to fix them next time.

Long story short, it turned out fantastic! My 19 month old son, ate the fire out of his plain cheese pizza.

Oh, a grilled pizza thread? I'm down with that. We actually made some last night as well, I tried out a new crust recipe, on the new grill, but cooked up our favorite toppings. Then finished off the meal with an Undercrown.

does it work on Gas Grill also ?

I have only done this once, so I cannot speak for anyone else who has done it a number of times.

My issues were managing hot spots on the grill. I cooked the hell out of one half of the dough, while the other side remained raw. So distribue your coals evenly according to their heat (Duh, right?). I plan on using a vegetable grill tool to start the initial side of the dough, so I can move it around easily and also pick up the dough as a whole to see where its done and not done.

The main thing TravelingJ told me was to cook the toppings first, as they will not cook on the pizza. So prepare that in advance. I threw the dough on the grill first, and let it get golden brown. Then flipped it and topped it with toppings. At this point you need to monitor the bottom, as it will cook quickly, and is easy to burn. I finished mine off in an oven (low heat) so the mozzarella could melt. This also keeps it warm while I cooked the other pizza(s).

There are half a million dough recipes on the internet, but this one was given to me. Providing TravelingJ doesnt care, Ill type it up and post it. It was delicious. It was more of a thin crust than it was a thick.

From what all I have read on the internet, this can be done with a gas grill. But then you also miss out on the smoky flavor of the charcoal. To each his own. But there are plenty of debates on Gas vs. Charcoal (im sure you have all heard of them).

Once I have approval from TJ, ill get the recipe out tonight and type it up (providing he is cool with it).

This was fun for the whole family, so be prepared to do this alone, or invite someone to jump in. You may want to give it a try first, before you decide to do this for your next home party or something though. Like I said, I burnt the bottoms of these pretty good. I will not do it again though! (probably will, but I have to try).

It's real easy to burn, and to an extent, it's not that big of a deal. It adds to the character of it all. The dough recipe isn't mine, it's just one from a book I bought. We like it a lot, however. Feel free to post it. I've been meaning to try one for a California Thin Crust, but it needs to rest in the fridge for 24 hours. I never remember to make it that far in advance. When I picked up yeast the last time, they had Pizza Yeast right there. I grabbed a pack and thats what we used last night. It has the recipe on the back of the package, and you mix and go. No rise or wait time, so you can make the dough as fast as your charcoal chimney is ready.

Sure you can make it on a gas grill, but that's really not much different than your oven, now is it?

Like Chris said, cook the toppings first. I don't use an oven AT ALL for mine, it defeats the point. I precooked the sausage, chopped it, and put it on with the cheese. The recipe I made last night didn't use any sauce, just a layer of flavored olive oil, and a base of cheese, then the toppings. I will attach a picture of the crust after i had it on the grill for one side. It needed another minute, but you'll get the idea. I've seen 'pizza screens' on Amazon for about $10, and I plan to pick some up to try it. More air/smoke will get to the crust versus foil or a veggie tray. As is, I just throw it straight over the grate and get to go'in. When you lift it up to check, you can rotate it around so things cook evenly. It firms up to that point fairly quick, and if it isn't that firm yet, it probably isn't burnt yet.

Edited my post about the italian sausage and shrimp pizza with pesto. It's actually chorizo. Don't know what I was thinking.

The italian sausage goes on the mega pizza.

I use a pizza stone on my BGE and think it generally handles the hot spot issue. I really need to get a pizza flipper thingy cause it's a giant pain not having one.

That BGE pizza stone is supposed to be one of the best ones out there, from everything I read. I plan to actually get 2 of them, to use in my Weber. Until then, this system does work damn good. In fact, I just finished a breakfast pizza we made up for this morning.
