I guess this is a Southern thing so if you've never had it you should. I think it's best served on saltines while watching the ball game
2 cups freshly grated sharp cheddar (don't use pre-grated it will not hold together)
8 oz cream cheese cut into chunks at room temperature
4 oz red pepper relish (mild or medium) about 1/3 of a jar
2 Tablespoons mayo
garlic powder and onion powder to taste about 1/4 teaspoon each
cayanne pepper about 1/4 teaspoon if desired
combine all either by hand or with an electric mixer till ingredients are well incorporated and hold together
if you have had store bought pimento cheese spread as good as this please let know!
