Homemade Pimento Cheese

I guess this is a Southern thing so if you've never had it you should. I think it's best served on saltines while watching the ball game

2 cups freshly grated sharp cheddar (don't use pre-grated it will not hold together)
8 oz cream cheese cut into chunks at room temperature
4 oz red pepper relish (mild or medium) about 1/3 of a jar
2 Tablespoons mayo
garlic powder and onion powder to taste about 1/4 teaspoon each
cayanne pepper about 1/4 teaspoon if desired

combine all either by hand or with an electric mixer till ingredients are well incorporated and hold together

if you have had store bought pimento cheese spread as good as this please let know!

I've become very well acquainted with Pimento Cheese in the past 4 months. We never touched that stuff in Cali.
It's good on cucumber slices too.

There is a brand called Palmetto cheese that is sold around here, it's pretty good. The one w/jalapeno is one I prefer.

Definitely cannot say it's better than above!

I'll give it a go in the future.
I agree w/ the saltines, they are a staple in my house. I could live off of saltines & peanut butter; but they have to be Premium Saltines!!
