How you guys doing your turkey?

Anyone doing anything special for theirs? I am fairly simple and brine mine for 2 days then start high temp to brown...then turn it low
Huge fan of brining
I wish I had enough duck fat to confit a whole turkey...but alas.

smoke a 10lb bird for about 7 hours..

put a light, sweet, rub on it about 48 hours in advance.. then hit it with a apple juice/coke based mopping sauce about once an hour, every hour, while its smoking...


mmmmmmmmm...... cant wait!

had great results doing a 24 hour brine, cribbed the process from alton brown @good eats. as i have a teeny house, it usually goes into a double trash bag, then a roasting tray in the fridge: trash bag turkey always has a fight for the leftovers. o)

I buy a frozen one, give it to my mom, then when I go over there on Thanksgiving its ready to eat. Magic I tell ya...

That's pretty funny Hosh. Took me a second but funny. I use the Alton Brown brine method as well. Can't beat a good brine.
