How about Stogies at the Dellagio Town Center? They have seating for 60 (plus outside seating) and a full bar with craft beers. Stogies is open from noon to 2am every day. Possibly Thursday night, Sunday night, Monday afternoon or Monday night?

Spoke with the manager at Stogies today and I told him I'd give him a heads up if we have more than 30 people coming. Last year we had 60 guests so that may be possible.

By the end of the week, I'll try to figure out a night to meet. BTW, Dion (Illusione) is definitely in. Let's see who else is coming.
