  • BOTL UPCOMING MAINTENANCE

    Hi Everyone, as mentioned in my introduction post, BOTL needs quite a bit of updating, patching and whatever else I might come across. Over the next few weekends BOTL may be unreachable on occasion as I do migrations or updates, etc. Just be patient - we'll be back! I'll generally try to keep these maintenances until later in the evenings.

Dove season opened Thursday and I was at our annual opening day shoot and cookout. Birds were flying and easy limits (15) were had by all. Today im enjoying some of the spoils.

Grilled pineapple habanero bacon wrapped dove and some fresh brussel sprouts i picked up at a farmers market this morning.

Nice!

Our Dove season opens today, I've already got a handful in the fridge. We are saving them up for a yearly hunting trip we make to the Delta of the MS river.

I tried it once, and didn't like it at all. The way you cooked em up-they sound good enough to make me interested in trying it again!

Never thought I liked brussel sprouts either until I had them at Bobby Flay's inside Cesears palace in vegas. Follow that up with a Casa Fuente CG and that will change your mind.

I LOVE brussel sprouts.

Get them fresh.
Cut them in half
A little Olive Oil, S&P roast them in the oven. flat side down!
YUM.......

Also, Ive never had dove. Whats it like? Taste like chicken?
Im assuming its gamier cuz you wrap it in bacon.

Not "gamey" at all. In fact I don't get the gamey thing. I believe that Americans are just so used to eating bland food that anything with flavor unlike beef or chicken is gamey. Sorry not directed at you Fourtotheflush just a quick vent.

Any bird that migrates, and doves do migrate, will be a dark meat. Another thing about <insert game bird here> is that when you remove the skin/fat you are left with a very (completely) fat free / lean piece of meat. Adding bacon adds much needed fat to prevent it from drying out. Doves have a taste all their own, but it is fairly mild. Very tasty and unlike any domestic animal so hard to draw a comparison.

Here is a hint. Microwave your bacon for a few minutes and let it cool/drain BEFORE you wrap the bird in it. If you don't you end up grilling the birds for WAY to long because you are trying to get raw bacon cooked to edible state. Unfortunately, when you do this you completely overcook the bird and end up with an unpleasant dish instead of med rare goodness and done bacon. This trick works with duck, geese, and dove equally well. :thumbsup:
