  • BOTL UPCOMING MAINTENANCE

    Hi Everyone, as mentioned in my introduction post, BOTL needs quite a bit of updating, patching and whatever else I might come across. Over the next few weekends BOTL may be unreachable on occasion as I do migrations or updates, etc. Just be patient - we'll be back! I'll generally try to keep these maintenances until later in the evenings.

What are you guys brewing? What's in the fermenter? I figure with the handful of us that brew we could post up what we're making and recipes if requested.

I started out doing extracts like a lot of people do, I know at least someone here that started with grain/kegging. So I have both extract recipes and grain recipes. My Belgian Style wit with kiwi is my first all grain batch.

The RIS is still fermenting very actively. Will do so for another couple weeks. I won't drink any till christmas 2010. So 8 months or so of bottle conditioning.

Don't feel bad about your beer, I just started myself and I only use extracts at this point dude. We all start somewhere I just started doing beer two months ago but started doing cider and stuff in Oct because of cider season.

Im eager to know how this turns out, I really want to do a coffee oatmeal stout for next winter myself.

That all does sound good. I have heard of this: Pliney the Elder Clone kit (17oz of hops!)

and younger. Can't find that anywhere down here in Tx.

Interested in the recipe's for your Blue Moon'ish and Steve's Coco Wheat....I've got 25 pounds of 2 row and 25 of wheat sitting around just collecting dust. Would love to try and pull something together.

Belgian Strong Dark Ale (5 gallons - All Grain/Extract)
13 lb.s Belgian 2 Row Pilsener Malt or 8 lbs. Extra Light DME
8 oz. Belgian Biscuit Malt
8 oz. Belgian Aromatic Malt
6 oz. 60?L Crystal Malt
1 LB. Belgian Clear Candi Sugar


1/2 oz Bullion hops (bittering) 60 minutes BEOB
.5 oz Hallertau Hersbrucker (spicy flavor/aroma) 15 minutes BEOB
.25 oz. East Kent Goldings (aroma) 3 minutes BEOB

Wyeast 1762 Belgian Abbey II or White Labs WLP530 Abbey Ale

OG: 1.084
FG: 1.032
ABV: 6.9%
IBU: 17.


SRM: 10.8

Make one gallon test batches and adjust. Aged hops would be better...leave the pellets open in a cool/cold non-drafty place for 30 to 60 days. If you use aged hops, bump each of them up .25 ounces.

Blue Moon Ale Clone

5 lbs. Extra Light DME
2½ lbs. Orange Blossom Honey
1 oz. Hallertauer pellet hops (4½% - boil 45 minutes)
½ oz. Hallertauer whole hops (2.4% - steep 10 minutes)
1 oz. Coriander Seed (crushed - ½ boil 10 min, ½ steep 10 minutes)
1 oz. Orange Peel (zested fresh and dried, steep 10 minutes)
500 ml Wyeast #1214 Belgian Abbey yeast starter

Well the Blue Moon clone has been brewed. As I was making it I started questioning how much of a Belgian Wit this is going to be considering none of the ingredients were wheat based. Anyhow it smelled good had a nice color. If anything it will be a decent beer with a slight orange flavor to it. I think I'll have two full cases of Grolsch bottles to bottle in when the time comes.
