  • BOTL UPCOMING MAINTENANCE

    Hi Everyone, as mentioned in my introduction post, BOTL needs quite a bit of updating, patching and whatever else I might come across. Over the next few weekends BOTL may be unreachable on occasion as I do migrations or updates, etc. Just be patient - we'll be back! I'll generally try to keep these maintenances until later in the evenings.

Grandma took the girls, my son is working so I decided to make Kary an extra nice dinner. She worked until 8 so I had plenty of time. I went to a local grocery store where a friend I grew up with is the butcher. He always treats me right and tonight was no different, he sent me to the local Hy-Vee (he said he had nothing I would like, he is a good friend). Our local Hy-Vee now carries Amana Beef which I've never heard of but I will say is pretty damn good.

I got two filets, potatoes, jalapenos, imitation crab and bacon. I made bacon wrapped jalapenos stuffed with crab & cream cheese appetizers. I half cook the bacon, cut the jalapenos in half and hollow them out. Then stuff with cream cheese (I whip in a few jalapenos seeds), crab and wrap with the bacon. Cook for 15 minutes turning every five minutes. The sauce is Frank's Red Hot, Tabasco and Worchester.

I made twice baked potatoes, standard. Cheese, bacon more cheeses.
A sack of salad because I'm lazy.

I pan fried the filets, yes pan fried. You start with a cast iron skillet, put it in a 500* oven for 5 minutes. Put it on the stove and turn the burner on high, place the steaks in the pan and cook for 1.5-2 minutes (turn off burner), turn steaks and take the skillet and place it on the oven for 2 minutes. Remove skillet from the oven and place back on the stove and turn the burner back to high, turn the steak and cook for 1 minute, turn and cook for another minute. Turn off burner remove skillet and place in oven, turn off oven and leave for 1-1.5 minutes. Remove and set on stove and let stand 1 minute for medium-rare, 2 minutes for medium. Damn near fool proof for 1-1/2"-2" steak.

Paired with a 2006 Sterling Vineyards Cabernet Sauvignon which held up nicely with the jalapenos and the steak.

Big Mamma is now sleeping and I'm smoking a 2005 PSD #4 and finishing the second bottle of wine a 2006 Benton Hill Pinot Noir.
