Bourbon: Pappy 15 or 20, Any from the BTAC (George T. Stagg, Eagle Rare 17, Thomas Handy, etc.) Regular Buffalo Trace for cheaper bourbon.

Scotch: Glenrothes 1985 or Oban Distillers Edition

Irish Whiskey: Redbreast 12

Beer: Deschutes Abyss!!! or stick with Pliny if you're more of a Hop Head.

If I had to make a more realistic list I'd do this:

Bourbon: W.L. Weller any vintage (BTAC)
Scotch: Ardbeg Uigeadail
Beer: KBS

The rum I'd add to both lists is: Plantation 20th Anniversary Extra Old from Barbados

Wine - 1983 J.J. Prum Wehlener Sonnenuhr Auslese Riesling Goldkapsel.
mmmmm .... Auslese ... our favorite kind of wine :) Can't recall if we've had this label (definitely not an '83, lol), but our favorites are typically from the Mosal-Saar region of the Rhineland.

Joh. Jos. Prum is fantastic riesling. I'm particularly a fan of their Kabinett's. They're so juicy it's like drinking huge bites of a fruit salad. The auslese's have a fantastic complexity and richness though. I almost always prefer auslese's for just about any German varietal. JJ Prum is a Mosel producer too, one of the absolute best in my opinion too.
