I don't have the ingredients on hand but I was thinking about making this for breakfast sometime in the near future. Don't have the quantities down yet but this is a pretty rough idea of what I'd like to do.

5 red bell peppers cut in half so as to make two cups
3 eggs
2 boneless skinless chicken breasts cooked
4oz shredded sharp cheddar cheese
2oz grated parmesan cheese
2oz heavy cream
2 slices 12 grain bread
1 yellow onion
2 cloves garlic
Fresh oregano to taste
Fresh basil to taste
Fresh ground pepper to taste

Optionally you can add some high powered chilis in with the eggs if you prefer some spice.

1. Preheat oven to 400 degrees.
2. Combine eggs, chicken, cheddar cheese, cream, bread, garlic and herbs in food processor. Mix.
3. Pour egg mixture into bell pepper cups, until about 2/3 full.
4. Bake on cookie sheet on middle rack for 12 minutes.
5. Top with parmesan and ground pepper.
6. Let cool for 5 minutes, serve.

This reminds me of this one recipe I would make as a kid where you take balogna and stick it in a muffin tin to make a cup shaped thing and then fill it with egg mixture and then stick it in the oven. The bologna and egg stiffens together enough that you can pry them out later.
