How many racks of st louis style ribs you think ill need for 10-12 people. Im smoking some ribs Sunday for Fathers Day, wondering how many racks I should do. Also on the menu are dogs and burgers, mom-in-laws KICK ASS potato salad, and eh, probably it.

Damn that is a good idea! I usually figure 5-6 ribs per person (I personally take care of any leftovers) and multiply by guests. Potato salad sound good too. Think she'll share her recipe, potato salad on LI if it's not homemade sucks for the most part.

I do half a slab of babys per person or quarter slab of spares per person. You get the pickers that don't eat much but you also have the hogs that'll eat till they hurt. This is my ratio. 1/2 = baby, 1/4 = spares

i went with 4 slabs. hopefully theyre big, if not ill go out saturday night and by a couple more. im thinking that will be good, if not, f'em. I know ill be polishing of a rack myself. !!!

depends on how large the racks are(this can be applied to multiple things) when I cooked for 6 people, i cooked 3, 3 plus pounds of loin back ribs(baby backs are until 1.5lbs and loin backs are above that)

With all the other sides that you have going on 4 slabs should suffice, you may want to grab one more slab to even it out, but not everyone will want to eat ribs.

I do a combo of mayo and vinegar(apple cider or white wine) with celery salt.

Love dad duty, its just tiring. Glad to see all is well with you joselito.

This is one we used to do at the restaurant, it is a pretty sweet tasting coleslaw if that is what you are going for. This is a guesstiment of the measurements but should be pretty close(you can add half the salad dressing and mayonnaise and add more to get the desired consistency) and should make enough for approx 15-20 people.

1 Head of cabbage
1 Carrot
2/3 cup Salad Dressing (such as Miracle Whip)
2/3 cup Mayonnaise
4 tablespoons vegetable oil
1 cup white sugar
2 tablespoons white vinegar

Dice/shred cabbage and carrots, mix everything in a bowl and chill for an hour

My wife makes a GREAT asian Slaw!
Goes something like this (if you are interested I can get you the real recipe)

1 head cabbage chopped, washed and spun dry.
Put into large bowl.
Mix in a bunch of chopped green onion.
Saute two packs or Raman noodles in butter in a pan (Do not use the flavor packs)....
Thats right ! Raman!
mix 1/4 & 1/4 cup rice wine vinegar and soy sauce

Let raman cool and put on top of cappage

Pour soy & vinegar over the salad, garnish with some left over green onion.

IT IS AWESOME!
