  • BOTL UPCOMING MAINTENANCE

    Hi Everyone, as mentioned in my introduction post, BOTL needs quite a bit of updating, patching and whatever else I might come across. Over the next few weekends BOTL may be unreachable on occasion as I do migrations or updates, etc. Just be patient - we'll be back! I'll generally try to keep these maintenances until later in the evenings.

Any tips on smoking a turkey?

We have a 20 pounder so I'm thinking it's too big as from what I've read online we're looking at about a 10-12 hour cook time at around 250 degrees.

I've gotten really good at doing ham and we enjoy it so much I'd like to do a turkey. We usually eat lunch for thanksgiving. I guess I could put it on the smoker around 1 am an play xbox all night, lol. I have a propane smoker and so far it's been set and forget.

Be sure to brine that turkey first.

Here's what I do. I'll put my bird in a 5 gallon bucket with the following

I make this mixture up as many times as it takes to cover the bird with water

1/4 cup kosher salt
1/2 cup brown sugar
64oz water
1/2 teaspoon cumin
1/2 teaspoon thyme
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
5 whole peppercorns
1 bay leaf

stir it all up til the sugar and salt dissolve.

once the bird is covered up, i cut a grany smith apple into 8 pieces and stuff it in the bird and in the water and stuff.

put it in the fridge and let it go for up to 24 hours. Drain and rinse it and then smoke it with apple wood. DELICIOUS!!!

i usually do up to 15 lbs and it take me about 6 hours at 225.

I've done the all night thing and it's so worth it. My smoker will run about 2.5 hours before I need to put more wood in, so I get up, put on the wood, go back to bed, and keep doing that as long as I need to. It's SOOOOOO worth it.

That's what great about smoking...you work all night and it just makes it that much better when you eat it knowing how much love and work you put into.

And I'll say this, I'll put my turkeys up against anyones! They come out looking beautiful.

Sounds incredible. Unfortunately my wife has informed me we have changed to oven cooking. Unless I can get her to change her mind. :)
