Drinking this nice Aussie wine with my dinner while watching the 1986 light heavyweight championship fight between Evander Holyfield and Dwight Qawi (good match!). This is a Rhone blend of 50% Shiraz, 34% Grenache and 16% Mourvedre. 14.5% ABV.

I opened this bottle two days ago and decanted, but really found it undrinkable at that point. The aromas were almost non-existent and the flavors quite tannic and disjointed. Kind of like young cigars that are in their "sick" phase.

After two days though, the wine really opened up. Really nice aromas of black and blue fruit, cedar, tobacco and smoked meat. The flavors are smoother and better balanced - tons of black cherry, plum and blueberry. The tannins are still evident, but becoming more integrated. Good acidity. There is a nice creaminess on the finish which is fairly long. Really stood up well to my dinner of pasta with spicy italian sausage. Fantastico!

So, ye think it'd be betterto let it air for several days? Those I usually use to cook...

I've always followed the adage that if it's not good enough to drink it's not good enough to cook.

Most young red wines are much better after letting them breathe for a day or two.
